Mark is currently the Director of Events for DOLCE Events & Marketing, and Co-founder of the Key West Food and Wine Festival. In his role he is responsible for all aspects of producing these events.
Mark graduated from the University of Utah with a major in Architectural Engineering, then embarked on a career in the food and beverage/hospitality industry by joining the Marriott Corporation retiring after his 25 year career as Director of Catering at the New York Marriott Marquis in New York City.
He then moved to Brussels, Belgium and was the International Director of Sales for Meeting Matrix, a hospitality software company. He also taught at the Centre de Management Hôtelier International in Paris, France.
After moving back to Key West in 2002, Mark worked in two fine dining establishments as General Manager at Café Marquesa and Latitudes on Sunset Key.
He has volunteered, successfully producing the Taste of Key West & Vintners Dinner.
Mark is currently serving on the Board of Directors of The Old Island Restoration Foundation. Dedicated to preserving the architectural & cultural heritage of Key West.
As a member of the Key West Business Guild, Mark served on the Board of Directors, and is a member of the Key West Chamber of Commerce and American Institute of Wine & Food-South Florida Chapter.
His hobbies are photography, travel, cycling, web site design and great food & wine.
Diane brings with her years of event development and management expertise. Her role at Dolce Events & Marketing is attaining well paired sponsors to enhance a wide variety of events.
Diane has served on the Boards of Directors, of Waterfront Playhouse, The Key West Woman’s Club, The Tennessee Williams Exhibit, and The Junior League of Washington, and is a member of the American Wine Society and Tasters Guild, and the American Institute of Wine & Food-South Florida Chapter, MENSA and Intertel.
Diane’s former life as a stock broker and commodity trader has given her a broad financial background.
In 2013 Diane was Queen of Fantasy Fest, a result of seven weeks of creating, and manifesting 24 events, and earning donations to AIDS Help.
She has recognized skills in leading team projects including creating the 2018 Grand Prize winning Fantasy Fest Facade which included facilitating 15 separate projects.
As a board member and as a volunteer Diane has created memorable galas, lecture series, luncheons, fashion shows, weddings, wine pairing dinners, large scale craft sales, parties and other events from inception to execution, including creating invitations, marketing, selling tickets, scouting and designing venues, selecting entertainment, catering, and procuring sponsors.
She enjoys all forms of creativity, painting, costume creation, cooking, acting, performing comedy, travel, graphic design, interior design, construction, and great food & wine.
Donna Shields, MS, RDN a longtime Key West resident now a snowbird between Colorado and the Conch Republic, has been a cookbook author (Caribbean Light) and faculty at the Culinary Institute of America. She's also a registered dietitian nutritionist and co-founder of the Holistic Cannabis Academy, an online training program for health professionals.
She is joined by Gary Remmert, who can skin and pound a conch like a pro.
